Meal Prep Time: Autumn inspired

Long time no see… Meal Prep reloaded

Here I am again with an autumnal meal prep for you. The last few months I had so many great projects, that I lost track on the blog…

… but there is an important principle and it means “from now on” and for me it means that I can ALWAYS redefine myself. No matter what, now I set causes for the effects that come – very simple, quite logical!

Therefore, the Meal Prep series continues now, without guilty conscience and looking forward to many delicious autumn recipes!

Autumnal Meal Prep

The ingredients change abruptly in the month of October. There is less and less regional food in the selection.

I love the autumn, with it’s golden leaves, still warm sun rays, the dew in the morning…

It is the time of year, when Pumpkins are back in the kitchen, soups are coming out big again, and in today’s Meal Prep, we celebrate autumn with a delicious onion cake!

Grocery list

  • 1 endive lettuce head
  • 500 g of young spinach
  • 1 kg of potatoes
  • 2 big sweet potatoes
  • 1 butternut squash
  • 1 bunch of spring onions
  • 4 red beds
  • 2 kg of onions
  • 6 big carrots
  • 1 kg of red apples
  • garlic
  • eggs
  • 200 g crème fraîche
  • 200 ml of cream
  • 250 ml of coconut milk
  • 500 g of Greek yogurt
  • 100 g of butter lard

From the stock:

  • olive oil
  • salt
  • pepper
  • curry
  • ground caraway
  • Ingredients salad dressing
  • Seeds and nuts

Steps Meal Prep:

Time needed: 2 hours

This is a suggestion on how you can approach the work steps in a structured way in order to work as efficiently as possible in terms of time and energy. Of course, you can trade individual steps if you find this better.

  1. Roasted Vegetables

    Wash carrots and sweet potatoes, peel and dice small. Add garlic cloves (with skin) to the vegetables. Spread on baking trays, sprinkle with some olive oil; roasting for 35 minutes at 180 ° C
    (10 minutes + baking time)

  2. Pumpkin Puree

    Wash the butternut squash, core it, put it in the oven (30-45 minutes)
    (5 minutes + cooking time)

  3. Cook potatoes (2 minutes + cooking time)

    Wash potatoes and cook
    (2 minutes + cooking time)

  4. Wash beetroot well and cook

    (5 minutes + cooking time)

  5. Prepare the dough for the onion tarte

  6. Prepare filling of the onion tarte

  7. Bake onion tarte

  8. Drain potatoes,

    Allow to cool and place in a glass container. Refrigerate. (5 minutes)

  9. Drain beetroot,

    peel (they can be rubbed off well with your hands, if possibly wear kitchen gloves) and put in a glass container. Refrigerate.

  10. Wash salad

    Cut endive salad into thin strips, wash and spin dry, place in glass container or Zip-Lock bag and refrigerate. Wash spinach, spin dry and chill.

  11. Roast seeds and nuts

    Roast sunflower seeds and chopped walnuts golden in a frying pan.
    (10 minutes)

  12. Applesauce

  13. Sweet potatoes

    allow to cool and place in a glass container, refrigerate
    (5 minutes)

  14. Prepare roasted carrot soup

Working time:

The pure meal prep work time is 2h – 2.5h. Of course it depends on how well everything is in place when you start and how fast you cut the veggies etc.. However, in any case, there is still sufficient time for the direct rinsing of the used kitchen utensils, pots, sheets etc …

At the same time in the oven are: carrots, sweet potatoes, garlic and the butternut squash for the first 35 – 45 minutes. When the vegetables are done, it is time for the onion cake to bake for 35 minutes. Like that you can keep the heat in the oven…

The potatoes and beetroot simmer on the stove at the same time, the hot plates are still used to roast the seeds and nuts and to cook the applesauce. In the end you need a plate for the carrot soup.

Don’t worry- Meal Prep is great!

Investing in Meal Prep at the beginning of the week, or even at the end, for 2 hours plus shopping time, is always frightening. Still, I can only recommend it. The whole week, I came back to the prepared ingredients and was happy about how quickly I put a salad on the table. My son was happy not to take bread to school every day, but in between a piece of onion tarte. It is great to make a soup out of the fridge, after the youngest comes out of the swimming class really hungry … Try it! And tell me if you enjoyed it…
