Pickled red onions

We do have some favorites on the table. And these pickled red onions are definitely one of them. We actually always have a jar of them in the fridge.

Red onions are good to get around the year and the preparation is really fast. If you don’t have a mandolin (I love mine very much!) or any other slicer, you’ll have to put a little effort into slicing. Because the slices of onion should be as fine as possible.

Ingredients quickly pickled red onions:

The ingredients are actually always in my pantry, I often make this recipe on the spur of the moment as soon as the jar in the fridge starts to empty….

  • 2-3 medium red onions
  • 120 ml apple cider vinegar or white wine vinegar
  • 1 tablespoon coconut blossom sugar or brown sugar
  • 1,5 tsp sea salt
  • 0,5 tsp black peppercorns
  • 1 tsp. mustard seeds
  • 1 cup hot water

Peel the onions and slice them as finely as possible. As I said, if you don’t have a slicer, you’ll need some fine motor skills and patience. Fill the onions into a clean, sealable jar.

In a bowl, mix all other ingredients and pour over onions while still hot.

Let the onions sit for at least 1 hour, they are even better the next day. In the refrigerator, the pickled red onions keep for about 3 weeks – but they never last that long in our house…

What do the onions go with?

My son likes to put the onions on a thick sandwich, I love them on a nice bowl or in a salad and they have also taste wonderful as a topping for a soup.

Ingredients

  • 23 medium red onions
  • 120 ml apple cider vinegar or white wine vinegar
  • 1 tbsp coconut blossom sugar or brown sugar
  • 1,5 tsp sea salt
  • 0,5 tsp black peppercorns
  • 1 tsp. mustard seeds
  • 1 cup hot water

 


Instructions

  1. Peel onions and slice as finely as possible.
  2. Put sliced onions into a clean, sealable jar.
  3. In a bowl, mix all other ingredients and pour over onions while still hot.
  4. Let the onions sit for at least 1 hour, they are even better the next day.

Notes

The pickled red onions will keep in the refrigerator for a good 3 weeks – but they never last that long in our house….
