I know I am repeating myself, but if the weather is grey and the days are short, we have to add color to our lives! So today we will switch from orange to green and eat some delicious green-pea-coconut-soup, made with fresh mint. I used frozen peas, due to the season and for that reason this soup was made within minutes. Seriously you can make this beautiful, yummy and healthy soup in no time. Kids usually love the sweetness of fresh green peas, and so did my oldest and my youngest son. Not the middle one though he is a tough one with vegetables. But I am not giving up, still hoping that the day will come when he also starts to love greens….(Ok, for a little 6 year old boy who is not eating any green food, this soup was probably a bit to advanced…. but it was worth a try;-)). The Green-Pea-Coconut-Soup can be made within minutes!
Ingredients
- 1 tsp Ghee
- 1 onion, chopped
- 1 garlic, glove, grated
- 1/2 tsp salt
- 1 pinch chili powder
- 500 g Frozen sweet peas
- 1 l vegetable broth
- 400 ml coconut milk
- juice from 1 lime
- fresh mint
- Microgreens if desired
Instructions
- roast the onions and garlic in hot ghee until glassy
- add salt and chilli and roast for another 2-3 minutes
- add the broth
- add frozen sweet peas
- bring to a boil and simmer over low heat for 10 minutes
- purée with a hand blender
- add coconut milk (maybe a little less, if the soup is too thin otherwise)
- add lime juice
- add some salt ig needed
- chop mint leaves
- top the soup with mint and microgreens
