Flatbread – made out of carrot pulp

Flatbread Sandwich mit Feta und Rotkohl auf Teller

Why is making flatbread so cool?

We drink a lot of freshly squeezed vegetable juice in the winter. The favorite variety of the children is clearly carrot apple.

We adults like to add beetroot and lots of fresh ginger. Even salad and herbal remnants wander into my juices, but that’s another topic.

One thing is certain: if you have a lot of juices, you have plenty of vegetable pulp. Since we have only a centrifugal juicer, the pulp is still relatively humid and it hurts to throw it in the compost and not using it.

There are several ways to process vegetable pulp and flatbread is one of them!

And if I have no vegetable pulp?

The recipe is very simple and can be prepared as well with finely grated carrot. It should totally work. And anyway, the recipe invites to variations! It also tastes great with red beetroot carrots pulp, you can add some cheese to the dough or overbake it with cheese at the end of the baking time ….

I like flatbread as a sandwich. It can be frozen very well and thawed very quickly as needed.

It’s a perfect meal Prep Lunch: Flatbread made from the pulp of made juice, toasted or not. Top it with already prepared red cabbage salad from the fridge and some fresh feta over it. If you want add some fresh sprouts!

That’s why the recipe falls into the category Meal Prep Recipes!

All in all, it takes less than 5 minutes to prepare delicious sandwiches, when the main work, like the baking and salad preparation is already done.

  • Drop and remove the baking paper
  • Cut into sandwich slices

The flatbread lasts 2-3 days in the refrigerator, but can also freeze very well. To thaw briefly stuck it in the toaster.
