Fresh, fresh smoothie

Fresh mint is in the house!

The first mint is growing on my balcony and the garden is about to explode! We had snow last weekend and minus 6°C on Tuesday morning, but today the sun is bright and the air is warm. Birds are singing and everyone seems to have a huge smile in his face! Spring at it’s best! My boys are still at home, the easter break is coming to an end, but today we need to benefit from the weather and will go on a bike ride. So this is just the teaser, I will edit the post later… For now: Happy Friday!

What a beautiful day!

I love how everybody sneaks out of the cozy homes to meet each other. We have a nice little park in our neighborhood where everybody comes together. It is a wild mixture, students, retired people, teens, parents and tons of kids, all happy about the sun and warmth. Seriously a happy Friday! I am always surprised to see what happened during the long months of winter, I realized so many women (that I only know from seeing each other in the park or on the playground), being pregnant. I guess the huge winter coats did cover them well. But what a joy to see families growing!

Energy please!

I am still fighting with the layout of my website and blog. There was little time to really dig into the whole story, but it takes a lot of energy. I therefore needed a really fresh and energetic smoothie to start my day! Something that makes me feel shiny from the inside! I discovered the first roots of fresh mint on our balcony. That really indicates spring for me. And what could be fresher than mint? I juiced a couple of green apples with a whole lime as base for my smoothies. And yes you heard right, I did juice the whole and entire lime. The essential oils in the rind give the juice the freshest taste I can imagine. So lime & mint together = super fresh!

Green, but fruity smoothie:

It sounds like a lot of hassle to juice first in a juicer and then use the blender, as you have to clean two machines afterwards, but in this case I did not think twice. For the green smoothie we used 2 cups fresh apple lime juice, 1 kiwi, 2 cups of pineapple (frozen if you want to have a lovely cold mixture afterwards), 2 cm fresh ginger and 1/2 cup of fresh grown mint leaves. Delicious!!!

Watermelon cheer me up!

For the second smoothie I used a watermelon we had left from Monday. It is not season at all but we made a fruit cake out of watermelon, cantaloup and pineapple and lots of other fresh fruits to celebrate a birthday with a totally gluten and dairy free cake. And the leftovers where perfect to make another fresh and tasty smoothie to bring back the smile to my face. I had worked a bit on the website theme and got  so frustrated again by not understanding most of the things I want to do. I am sure there are a lot of people feeling the same out there. If you are not really into coding it is almost like reading a book in a fantasy language. Due to the lack of time I have the feeling not to get my feet on the ground. And as well I am stumbling over my wish to have things perfect as soon as I have the idea how it should look like. No patience from my side. I guess I really have to change this and let go the pressure to work things out always right away. Some things just need time… At the end of the day I figured out that I really need somebody to code for me to change the weird blank space in the sliders and to get the blog layout I want. I decided to give Fiverr.com a try to find somebody. We will see if it works, I keep you posted, or hopefully you will see a change soon.

Back to the smoothie, we (that means my boys and me) took 2 cups of the fresh apple lime juice, 2 cups watermelon and 1 cup frozen strawberries. Very basic but with the lime twist just perfect to cheer me up again! With new energy and all the freshness I indulged I wish you all a brilliant weekend!
