Every year I am very happy when the tomato season starts all over again! And now the time has come. The red, orange and yellow fruits shine brightly and colourfully towards me at the market – wonderful. Time for fresh pasta with tomato sauce!
Homemade pasta with tomato sauce
A classic that ALWAYS works! But with fresh tomatoes and basil, which has already seen sun and not only greenhouses, it tastes even better.
You can find the pasta recipe here, they are the most delicious tagliatelle I know! The dough is made quickly and as I have a pasta attachment for Kitchen Aid, the pasta is made super fast. If you work by hand, you need a little more patience, I admit!
The tomato sauce is nothing new – but that’s where the attraction lies. This makes the pasta a feel-good meal par excellence. I like to mix fresh, uncooked tomatoes into the sauce, lots of basil and preferably mozzarella.
The homemade pasta also makes the dish real filling! When the boys come home from school hungry (because 2 out of 3 are in school this week – hurray!), the pasta only has to be put into boiling water for 2-3 minutes and everybody is happy!
If you don’t have time to make your own noodles, you can just open a box of noodles. Of course, the tomato sauce also tastes good with bought pasta.
I am often asked: “What are you serving today?” and although most of the time it is a quite simple dishe – like the pasta with tomato sauce – I am just as often given the answer: “good idea, I’ll have to do that again too”. And it’s the same with me, sometimes I forget the simplest dishes for weeks and months and then I’m happy like crazy when I’m reminded of them somewhere.
And that is exactly why we have such a simple but very tasty dish here today! Enjoy it!

Description
Sometimes the simplest recipe is the best! And this fresh tomato sauce is definitely one of them!
Ingredients
- 1,5 kg tomatoes, preferably mixed
- 1 onion
- 2 cloves of garlic
- 2 tablespoons olive oil
- salt, freshly ground pepper
- 1 pinch of sugar
- 2 Mozzarella balls
- 1 bunch of basil
Instructions
- Peel onion and garlic and cut into fine cubes
- Heat the olive oil in a small pot and sauté the onions and garlic over medium heat until transparent
- Wash the tomatoes
- dice 1 kg of it and add it to the onion/garlic mixture
- salt and pepper, season to taste with a pinch of sugar
- Steam for 5 minutes
- finely dice the remaining tomatoes and mozzarella
- pluck basil
- mix all ingredients and fold into the freshly cooked pasta
Notes
As always, the recipe is the basis, you can vary as much as you like. Add thyme and rosemary to the sauce, chopped vegetables…
