When I visited a good friend lately, I found her sitting on the couch, nursing her little baby boy. She welcomed me with the words: could you please make me a sandwich? I am starving…. A couple of days later she told me about some “power balls” she made herself to have some rescue food when quick energy ist needed the most… Plus, they are delicious!
I couldn’t resist to make some. I used the basic recipe from Hannah Schmitz, you can find it here. As it is in german and because I changed some ingredients I’ll write it down for you. It is truly a little bite of tasty, nuttily buttery goodness and it makes a satisfying snack – if you are nursing or not :-).. Great for kids after school or before sport, basically any time you need a power snack to keep you going.
Nicely packed, Energy-Balls make a perfect little gift. And it is also a great idea to have some in your own fridge… You never know when you need the extra kick!
Energy-Balls
- 1/2 cup fine spelt flour
- 1/2 cup spelt semolina
- 1 cup ground almonds
- 4 tablespoons quinoa
- 1 cup cashew nuts,chopped
- 1/2 teaspoon cinnamon
- 1 Vanilla pod, seeded
- 1/2 cup honey ( not the liquid one)
- 50 g cold butter, cut in little pieces
- shredded coconut, cocoa, roasted sesame, pistachios…to roll the balls in
Roast the flour and the semolina in a pan, until it gets golden. Put it aside in a large bowl. Roast the almonds, quinoa and cashews until golden brown and add to the flour-semolina mixture. Add the spices and the honey and let cool down completely.
Add the butter in small pieces and knead all the ingredients together, until you have a smooth paste. Start forming small balls and roll them in shredded coconut, cocoa, chopped pistachios, roasted sesame…
Keep them refrigerated, they won’t last long anyway, because they taste to good!
