A fast egg-free version!
Ingredients
Scale
- 500 ml oat milk (alternatively add purchased milk and 1–2 tablespoons of oats)
- marc of the oat milk or 2 tablespoons of soaked oat flakes
- 75 g fresh spinach (alternatively frozen spinach defrosted)
- 200 g spelt flour
- salt, freshly ground pepper
- Olive oil for frying
Instructions
- Make oat milk and collect the marc
- Wash and sort the spinach, blanch for 1 – 2 minutes in boiling water, squeeze
- Mix all ingredients in a blender or with a hand immersion mixer
- Season with salt and pepper to taste
- Fry in hot olive oil in portions and cover as desired
